Description
This luscious nectar is a true rarity in the world of wine. Tokaj Esszencia marks the awesome ending of the botrytised aszú berry spectrum. It is made solely from the free-run juice of the aszú berries of Furmint and Hárslevelű grapes, which are picked individually across several sweeps of the vineyard and added progressively as the grapes come in. No base wine is used to dilute the sheer intensity of these grapes which are afflicted with so-called noble rot, which greatly intensifies the sugars, acidity, concentration and flavours. The must is then fermented very slowly in 50 liter glass carboys for two years. The nectar is then transferred to 68 liter ‘átalag’ barrels to age. It has an alcohol level of just 3% since a lot of the sugar is not able to be fermented as the yeasts cannot work efficiently in the sugar-rich environment. Honey-like with remarkable richness and concentration on the nose and palate, with the very high acidity of 16.7 g/l balancing the astonishing 518.9 g/l of residual sugar. Just like nothing on earth. To be enjoyed a special treat and can be served in place of dessert.
